(makes 2-3 servings)
- 2 cups cottage cheese ( recommend Good Culture!)
- 2 cups fresh blueberries
- 1/4 cup maple syrup
- Add cottage cheese, 1 cup of blueberries, and maple syrup to a food processor or blender and pulse until smooth.
- Fold in the remaining blueberries and mix well to combine.
- Pour the mixture into a freezer-safe container. Freeze for several hours until hard enough to scoop.
