HERE’S WHAT YOU NEED:
- 3.5 cups of old-fashioned oats
- 6 Tbsp melted butter
- 3 eggs
- 1 medium zucchini, shredded
- 1.5 c shredded carrots
- ½ c. dried cranberries
- ½ c. chopped walnuts
- ½ c. honey
- 2 tsp. Cinnamon
- 1 tsp. Baking soda
- ½ tsp. Salt
- 2 Tbsp. Beet root powder (optional)
FOLLOW THESE STEPS:
- Preheat oven to 350
- In a blender or food processor, pulse 2 cups of the oats into a flour texture. Add the remaining 1.5 cup of oats. Add cinnamon, baking soda, salt, cranberries, walnuts, and beet root powder to oats and stir well to incorporate. In a separate bowl, whisk together butter, eggs, zucchini, carrots and honey.. Add wet ingredients to dry ingredients and mix until just combined. Spoon batter into a lined 12-cup standard muffin tin. Bake for 25-30 minutes. Let cool and enjoy!
