POWER MUFFINS

Today I have your perfect bite – Power Muffins! This recipe makes for a yummy addition to breakfast or on the go snack! Your kids will love this, too – yay! Click on the video below now to join me in the kitchen for some delicious fun!

HERE’S WHAT YOU NEED:

  • 3.5 cups of old-fashioned oats
  • 6 Tbsp melted butter
  • 3 eggs
  • 1 medium zucchini, shredded
  • 1.5 c shredded carrots
  • ½ c. dried cranberries
  • ½ c. chopped walnuts
  • ½ c. honey
  • 2 tsp. Cinnamon
  • 1 tsp. Baking soda
  • ½ tsp. Salt
  • 2 Tbsp. Beet root powder (optional)

FOLLOW THESE STEPS:

  • Preheat oven to 350
  • In a blender or food processor, pulse 2 cups of the oats into a flour texture. Add the remaining 1.5 cup of oats. Add cinnamon, baking soda, salt, cranberries, walnuts, and beet root powder to oats and stir well to incorporate. In a separate bowl, whisk together butter, eggs, zucchini, carrots and honey.. Add wet ingredients to dry ingredients and mix until just combined. Spoon batter into a lined 12-cup standard muffin tin. Bake for 25-30 minutes. Let cool and enjoy!
