Apple and Farro Salad

(Makes 4 servings)
1 cup cooked farro
1 large apple, cored and diced
6 cups arugula
1/4 cup walnuts or almonds, chopped
1/4 cup dried cranberries
2 ounces of crumbled goat cheese
Vinaigrette
2 tablespoons lemon juice, fresh-squeezed
1 teaspoon Dijon mustard
1 teaspoon maple syrup
1/4 cup olive oil
In a small mixing bowl, combine all ingredients for the vinaigrette and set aside.
In a large bowl, add farro, apple, arugula, nuts, cranberries, and goat cheese. Toss well to combine.
Once combined, pour the vinaigrette over the salad and toss again.
