White Bean Chicken Chili
(makes 6 servings)

2-3 Boneless, skinless chicken breasts

3-4 C. Chicken broth (based on desired thickness of chili)

2 Cans cannellini beans, drained

2 Cans diced green chiles

3 Cloves garlic, chopped

1 Small yellow onion, diced

2 tsp. Cumin
-
2 tsp. Chili powder
-
½ tsp. Cayenne pepper (optional)

½ tsp. Salt

Place uncooked chicken in the bottom of a large crockpot.

Top with remaining ingredients and cook on low for 4-6 hours or, until chicken is cooked through.

Remove chicken and shred. Set aside.

With an immersion blender, blend chili for a few seconds in order to thicken it. You can also remove a ladle or two of chili and place in a blender. Return chicken to crockpot and stir well

Top with desired toppings such as cheese, avocado, cilantro, etc.

You can also use a rotisserie chicken to save time on cooking!
