WHITE BEAN CHICKEN CHILI

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features: White Bean Chicken Chili. Full recipe is posted below.

White Bean Chicken Chili

(makes 6 servings)

  • 2-3 Boneless, skinless chicken breasts

  • 3-4 C. Chicken broth (based on desired thickness of chili)

  • 2 Cans cannellini beans, drained

  • 2 Cans diced green chiles

  • 3 Cloves garlic, chopped

  • 1 Small yellow onion, diced

  • 2 tsp. Cumin

  • 2 tsp. Chili powder

  • ½ tsp. Cayenne pepper (optional)

  • ½ tsp. Salt

  1. Place uncooked chicken in the bottom of a large crockpot.

  2. Top with remaining ingredients and cook on low for 4-6 hours or, until chicken is cooked through.

  3. Remove chicken and shred. Set aside.

  4. With an immersion blender, blend chili for a few seconds in order to thicken it. You can also remove a ladle or two of chili and place in a blender. Return chicken to crockpot and stir well

  5. Top with desired toppings such as cheese, avocado, cilantro, etc.

  6. You can also use a rotisserie chicken to save time on cooking!
