Calling all my fellow tuna lovers – this one’s for you! Another recipe requiring ZERO actual cooking! That’s right, aside from using a can opener, this dish is exactly what you need when craving something simple yet satisfying. Have it your way over a bed of greens, and enjoy!

Ingredients: Here’s What You Need
- 1-5 oz. can of tuna packed in WATER
- 1-15 oz. can of cannellini beans, drained and rinsed
- 1- roma tomato, diced
- ½-cucumber,diced
- ¼ c. red onion, diced
- 4 T. lemon juice, fresh
- 2 T. olive oil
- 2-3 cloves of garlic, minced
- ½ T. Italian seasoning
- 2 tsp. Dijon mustard
- Salt and pepper, to taste
- 4 C. arugula
Recipe: Follow These Steps
- In a small bowl, whisk together lemon juice, olive oil, garlic, Italian seasoning, Dijon mustard, salt and pepper.
- In a larger bowl, combine tuna, beans, tomato, cucumber and onion. Mix well.
- Pour dressing mixture over tuna and beans and mix well.
- Serve over arugula.
