TUNA & WHITE BEAN SALAD

Calling all my fellow tuna lovers – this one’s for you! Another recipe requiring ZERO actual cooking! That’s right, aside from using a can opener, this dish is exactly what you need when craving something simple yet satisfying. Have it your way over a bed of greens, and enjoy!

Ingredients: Here’s What You Need

  • 1-5 oz. can of tuna packed in WATER
  • 1-15 oz. can of cannellini beans, drained and rinsed
  • 1- roma tomato, diced
  • ½-cucumber,diced
  • ¼ c. red onion, diced
  • 4 T. lemon juice, fresh
  • 2 T. olive oil
  • 2-3 cloves of garlic, minced
  • ½ T. Italian seasoning
  • 2 tsp. Dijon mustard
  • Salt and pepper, to taste
  • 4 C. arugula

Recipe: Follow These Steps

  • In a small bowl, whisk together lemon juice, olive oil, garlic, Italian seasoning, Dijon mustard, salt and pepper.
  • In a larger bowl, combine tuna, beans, tomato, cucumber and onion. Mix well.
  • Pour dressing mixture over tuna and beans and mix well.
  • Serve over arugula.
