It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features Stuffed Dates – full recipe is posted below:

Stuffed Dates

(makes 1 servings)

  •  3 Medjool dates, pits removed

  •  1 tablespoon almond butter

  •  1 tablespoon mini chocolate chips

Add 1 teaspoon of almond butter to each date and top with chocolate chips.
