Stuffed Acorn Squash

Stuffed Acorn Squash

          Squash:

  • 2 acorn squash

  • 1 pound ground chicken

  • 1/4 cup walnuts, chopped

  • 1 medium apple, diced

  • 1/2 yellow onion, diced

  • 2 teaspoons thyme

  • 1 tablespoon olive oil

  • salt and pepper, to taste

    Dijon Vinaigrette:

  • 1/4 cup olive oil

  • 3 tablespoons maple syrup

  • 2 tablespoons Dijon mustard

  • 1-2 cloves garlic, minced

    **Whisk all ingredients together to combine.

  1. Pierce squash with a knife in several places. Place in microwave for 5-8 minutes until the flesh of squash has softened. Allow cooling.

  2. Coat a pan with 1 tablespoon of olive oil. Add onions, apple, and thyme. Cook until softened.

  3. Remove from the pan and set aside. Add the ground chicken to the pan and brown until cooked through. Season with salt and pepper, to taste.

  4. Combine the cooked chicken with the apple/onion mixture and mix well.

  5. Once the squash is cool enough to handle, slice lengthwise and remove the seeds. Fill each half with  1/4 of the ground chicken mixture. Top each with 1 tablespoon of chopped walnuts and prepared Dijon vinaigrette.
