Spicy Peanut Soup

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features :

Spicy Peanut Soup

(makes 6 servings)

  • 1 teaspoon sesame oil

  • 1/2 white onion, diced

  • 2 large bell peppers, seeded and chopped

  • 2-3 cloves garlic, minced

  • 4 cups low-sodium chicken broth

  • 1 16-ounce can diced tomatoes

  • 1 Tablespoon curry powder

  • 1/2 teaspoon cayenne pepper, if you like it spicy!

  • 2 cups diced rotisserie chicken or, prepared chicken

  • 1/2 cup uncooked brown rice

  • 1/4 cup smooth natural peanut butter

  1. In a large pot, heat sesame oil over medium heat. Sauté’ onion, garlic, and bell peppers until the onions begin to brown.

  2. To the pot, add broth, tomatoes, curry powder, cayenne pepper, and rice.

  3. Simmer uncovered over low heat for 30 minutes, or until rice is tender.

  4. Add chicken and stir well.

  5. Whisk in peanut butter until it melts into the broth and the soup is smooth. Heat until chicken is warmed through.
