Spicy Shrimp & Zoodles


It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features Spicy Shrimp & Zoodles. Full recipe is posted below:


(makes 2-3 servings)

  • 1 tablespoon olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon crushed red pepper

  • 2 tablespoons lemon juice, fresh-squeezed

  • 1 pound shrimp, peeled and deveined

  • 2 medium zucchini, spiralized into noodles

  • salt and pepper, to taste

  1. Heat olive oil in a large skillet. Add the shrimp, garlic, red pepper, salt, and pepper to the skillet. Cook the shrimp and stir frequently for about 4 minutes. Once the shrimp is cooked through, stir in the lemon juice and mix well. Transfer the cooked shrimp to a plate and set aside.

  2. To the same skillet, add the zucchini noodles and saute for 1-2 minutes. Add the shrimp to the zucchini noodles and stir to combine.

  3. Enjoy!
