(makes 2-3 servings)

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon crushed red pepper

2 tablespoons lemon juice, fresh-squeezed

1 pound shrimp, peeled and deveined

2 medium zucchini, spiralized into noodles

salt and pepper, to taste

Heat olive oil in a large skillet. Add the shrimp, garlic, red pepper, salt, and pepper to the skillet. Cook the shrimp and stir frequently for about 4 minutes. Once the shrimp is cooked through, stir in the lemon juice and mix well. Transfer the cooked shrimp to a plate and set aside.

To the same skillet, add the zucchini noodles and saute for 1-2 minutes. Add the shrimp to the zucchini noodles and stir to combine.
