Peanut Butter and Chocolate Oat Donuts
(makes 6 donuts)

1 cup oat flour

1/4 cup cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt
-
2 tablespoons coconut oil or butter, melted
-
1/4 cup maple syrup
-
1/4 cup plain Greek yogurt
-
1/4 cup milk of choice
-
1 teaspoon vanilla
-
1 egg
Peanut Butter Frosting
-
1/4 cup powdered peanut butter
-
2-3 tablespoons warm water
Follow these steps:

Preheat the oven to 350 degrees and spray a donut pan with non-stick spray.

In a small mixing bowl, combine oat flour, cocoa powder, baking soda, and salt. Whisk until mixed well.

In a large mixing bowl, combine coconut oil or butter, maple syrup, Greek yogurt, and, milk. Whisk until smooth. Add vanilla and egg and whisk again.

Add dry ingredients to the wet ingredients and mix well to combine the donut batter. Allow the mixture to sit for 5 minutes.

Place the batter into each well of the donut pan and fill each one 3/4 of the way full.

Bake for 8-10 minutes until the donuts are springy to touch. Allow donuts to cool completely before frosting.

To make the frosting, whisk together peanut butter powder and 2 tablespoons of warm water. Add additional water if needed until the consistency is slightly runny.

Once combined, drizzle over cooled donuts.
