Kale and Cabbage Stir-Fry with Chicken Sausage
(makes 4 servings)

1 package chicken sausage links, sliced

2 Tablespoons olive oil

1 medium onion, halved and sliced

4 cloves garlic, minced

1 head green cabbage, cored and chopped

6 cups kale, chopped

2 Tablespoons apple cider vinegar

salt and pepper, to taste

In a large skillet, cook chicken sausages until browned. Transfer to a plate.

Add olive oil to skillet. Add onion and garlic and cook for 2-3 minutes. Next, add the cabbage and cook until tender. Season with salt and pepper.

Add kale and apple cider vinegar to the skillet and stir well to combine. Place chicken sausage back in the skillet and combine. Cook until kale has wilted and serve.
