HEALTHY HAMBURGER SOUP

HEALTHY CROCK-POT HAMBURGER SOUP

Ingredients: Here’s What You Need

  • 1 pound ground beef, turkey or, chicken

  • 1 yellow onion, diced

  • 1 bell pepper, diced

  • 4-6 cloves of garlic, minced

  • 2 medium sweet potatoes, peeled and cubed

  • 2 medium carrots, diced

  • 2 stalks celery, diced

  • 2 cans fire-roasted diced tomatoes

  • 1 6-ounce can tomato paste

  • 1-quart low-sodium beef broth (or more, if needed)

  • 2 tablespoons Italian seasoning

  • Salt and pepper, to taste

  • 8 ounces fresh green beans, cut into 1-inch pieces

  • 2 cups chopped kale

Recipe: Follow These Steps:

  • In a large skillet, add ground meat, onion, bell pepper, and garlic. Sauté until ground meat is cooked through.

  • Add all ingredients to slow-cooker except green beans and kale.

  • Cook on low for 6-8 hours or, on high for 4-6 hours.

  • When 2 hours of cooking time remains, add green beans and kale to the soup. Add additional broth if needed.

  • Serve and enjoy!
