HEALTHY CROCK-POT HAMBURGER SOUP

Ingredients: Here’s What You Need

1 pound ground beef, turkey or, chicken

1 yellow onion, diced

1 bell pepper, diced

4-6 cloves of garlic, minced

2 medium sweet potatoes, peeled and cubed

2 medium carrots, diced
-
2 stalks celery, diced
-
2 cans fire-roasted diced tomatoes

1 6-ounce can tomato paste
-
1-quart low-sodium beef broth (or more, if needed)

2 tablespoons Italian seasoning

Salt and pepper, to taste

8 ounces fresh green beans, cut into 1-inch pieces

2 cups chopped kale
Recipe: Follow These Steps:

In a large skillet, add ground meat, onion, bell pepper, and garlic. Sauté until ground meat is cooked through.

Add all ingredients to slow-cooker except green beans and kale.

Cook on low for 6-8 hours or, on high for 4-6 hours.

When 2 hours of cooking time remains, add green beans and kale to the soup. Add additional broth if needed.
