BUTTERNUT SQUASH EGG BAKE

Ingredients: Here’s What You Need

12 eggs

12-ounce bag of pre-cubed butternut squash

3 cups fresh spinach, chopped

3 ounces crumbled goat cheese

¼ cup milk of your choice

½ teaspoon dried sage

salt and pepper, to taste

Recipe: Follow These Steps:

  • Preheat oven to 350 degrees and lightly spray a 9×13 baking pan with cooking spray.

  • In a large bowl, whisk eggs. Add milk, sage, salt and, pepper and whisk until incorporated.

  • Cut a small slit into the bag of butternut squash to allow steam to escape. Microwave for 3 minutes to slightly soften. Allow cooling for several minutes before handling.

  • Pour egg mixture into prepared baking pan and gently mix in spinach, squash and goat cheese.

  • Bake for 30-35 minutes until eggs are set.

  • Allow cooling for several minutes. Cut into 6-8 squares and serve.
