Apple Pie Overnight Oats

Apple Pie Overnight Oats

(makes 1 serving)

  • 1/2 cup oats

  • 1/2 cup milk of choice

  • 1/2 cup plain Greek yogurt

  • 3 teaspoons maple syrup

  • 1/2 teaspoon vanilla

  • 1/2 teaspoon cinnamon

  • 1 medium apple, peeled and diced

  • 1 tablespoon walnuts or almonds, chopped (optional)

  • 1 teaspoon almond butter

  1. Peel and dice the apple. In a microwave-safe dish, add diced apples, cinnamon and 1 tsp of maple syrup. Microwave for 60 seconds and allow to cool.

  2. To a mason jar or bowl, add oats, almond milk, Greek yogurt, vanilla and remaining maple syrup. Mix well.

  3. Top with diced apple mixture, chopped walnuts and drizzle almond butter on top. Close jar or cover bowl and store in fridge overnight.

  4. Before eating, mix well and add additional almond milk if needed to achieve desired consistency..
