Almond Butter Chicken Salad


It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features Almond Butter Chicken Salad – full recipe is posted below:


(makes 2 servings)

  •  2 cups chicken, shredded

  •  2 tablespoons almond butter

  •  2 tablespoons olive oil

  •  2 teaspoons apple cider vinegar

  •  1 teaspoon Dijon mustard

  •  1/4 teaspoon salt

  •  1 cup celery, chopped

  •  1/3 cup grapes, halved

  • 1/3 cup grapes, halved

  1. In a small bowl, whisk together almond butter, olive oil, apple cider vinegar, Dijon mustard, and salt.

  2.  In a large bowl, combine chicken, celery, and grapes.

  3. Add dressing and toss until coated.
