Almond Butter Chicken Salad
(makes 2 servings)

2 cups chicken, shredded

2 tablespoons almond butter

2 tablespoons olive oil

2 teaspoons apple cider vinegar

1 teaspoon Dijon mustard

1/4 teaspoon salt

1 cup celery, chopped

1/3 cup grapes, halved

1/3 cup grapes, halved

In a small bowl, whisk together almond butter, olive oil, apple cider vinegar, Dijon mustard, and salt.

In a large bowl, combine chicken, celery, and grapes.

Add dressing and toss until coated.
