- 1 cup old-fashioned rolled oats
- 1/2 cup natural peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/4 cup dark chocolate chips (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- A pinch of salt
- Optional toppings: shredded coconut, chopped nuts, or festive sprinkles
- In a medium saucepan over low heat, combine the peanut butter (or almond butter), honey (or maple syrup), cocoa powder, vanilla extract, cinnamon, and salt. Stir until melted and smooth, about 2-3 minutes. Remove from heat.
- In a large mixing bowl, add the rolled oats. Pour the melted mixture over the oats and stir until well combined. If using dark chocolate chips, fold them in at this stage.
- Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the parchment paper, flattening them slightly to form cookie shapes.
- Place the baking sheet in the refrigerator for about 30 minutes to allow the cookies to firm up.
- If desired, sprinkle with shredded coconut, chopped nuts, or festive sprinkles before serving.
