ZUCCHINI LASAGNA

Who doesn’t love lasagna?!

BUT, who also doesn’t want to deal with the pile of dishes required during the prepping and assembling process?

Good news! Not only is this week’s new recipe a healthier option for you and your family, it’s all going to cooking beautifully together in one single pan – are you doing the happy dance?

The zucchini is a quick and easy way for you and the kiddos to score more veggies without even realizing it because this is mouth watering good.

ONE PAN ZUCCHINI LASAGNA

Ingredients: Here’s What You Need

  • 1 pound ground turkey, chicken or, beef

  • 1 white onion, diced

  • 3 cloves garlic, minced

  • 1 cup of mushrooms, sliced

  • 2 medium zucchinis

  • 2 cups fresh spinach, chopped

  • 1 cup marinara sauce

  • ¼-½ cup fresh parmesan cheese

  • 2 tablespoons fresh basil

  • 2 teaspoons dried oregano

  • 1 teaspoon garlic powder

  • salt and pepper, taste

Recipe: Follow These Step:

  • Chop the ends off of the zucchini and slice into long, thin strips using a mandolin slicer. Pat strips down with paper towels to remove any excess moisture.

  • In a large skillet, brown the ground meat of choice. Drain meat when cooked through and set aside.

  • Cook onions and garlic until translucent. Add mushrooms and zucchini slices. Sauté for 4-5 minutes or, until softened.

  • Return ground meat back to the skillet along with marinara sauce and seasonings. Cook for several minutes and add spinach at the very end.

  • Cook until the spinach is wilted. Top with parmesan cheese.
