Zoats


It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features Zoats – full recipe posted below.


(makes 2 servings)

  • 1 cup old-fashioned oats

  • 2 cups water

  • 1 cup zucchini, grated and squeezed of all liquid

  • 6 egg whites

  • pinch of sea salt

  • pinch of cinnamon

  • Additional toppings such as sliced banana, pure maple syrup, nuts, etc.

  1. In a saucepan over medium heat, add oats, water, and zucchini. Simmer until most of the liquid is absorbed, about 5 minutes.

  2. Remove from heat and add egg whites, stirring constantly. 

  3. Return to heat and stir until fluffy, about 1 minute.

  4. Season with salt and cinnamon.

  5. Pour into 2 bowls and top with additional ingredients.
