Zoats
(makes 2 servings)

1 cup old-fashioned oats

2 cups water
-
1 cup zucchini, grated and squeezed of all liquid

6 egg whites
-
pinch of sea salt
-
pinch of cinnamon

Additional toppings such as sliced banana, pure maple syrup, nuts, etc.

In a saucepan over medium heat, add oats, water, and zucchini. Simmer until most of the liquid is absorbed, about 5 minutes.

Remove from heat and add egg whites, stirring constantly.

Return to heat and stir until fluffy, about 1 minute.

Season with salt and cinnamon.

Pour into 2 bowls and top with additional ingredients.
