Waldorf Chicken Salad

Waldorf Chicken Salad

(makes 2-4 servings)

  • 2 boneless, skinless chicken breasts poached and shredded

  • 1/4 cup plain Greek yogurt

  • 1/3 cup celery, diced

  • 1/3 cup Granny Smith apple, diced

  • 1/3 cup red or green grapes, halved

  • 1/4 cup slivered almonds

  • salt and pepper, to taste

  1. Once poached chicken breasts have cooled, shred with two forks.

  2. To a large mixing bowl, add chicken and the remaining ingredients. Mix well and season with salt and pepper, to taste. If needed, add additional Greek yogurt to achieve a creamier consistency.

  3. Refrigerate for several hours for best flavor. When ready to eat, serve on a bed of greens, in a wrap, on a sandwich, or, can be eaten on its own.
