(makes 4 servings)
- 1 pound lean ground chicken, turkey, or beef
- 1 small yellow onion, diced
- 3 bell peppers, diced
- 2-3 cloves garlic, minced
- 1 8-ounce can tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt and pepper, to taste
- 2 cups cooked white or brown rice for serving
- In a large skillet, brown the ground meat until cooked through. Season with salt, pepper, onion powder, and garlic powder. Remove ground meat and set aside.
- In the same skillet, heat one tablespoon of olive oil. Add the peppers and onion and cook until softened. Add the minced garlic and cook for an additional minute. Add the ground meat back to the skillet and top with the tomato sauce. Stir well to combine. If the mixture is too thick, add 1/4 – 1/2 cup water to achieve desired consistency.
- Cover and simmer for approximately 20 minutes.
- Serve over cooked rice.
