Thai Chicken Stuffed Sweet Potato

Thai Chicken Stuffed Sweet Potato

(makes two servings)

  • 1 large sweet potato

  • 1-2 cups shredded rotisserie chicken

  • 2-4 tablespoons Thai peanut sauce

  • 2 tablespoons fresh cilantro, chopped

  • 2 scallions, sliced

  • 2 tablespoons peanuts, chopped

  1. Pierce sweet potato with a fork several times and place on a microwave-safe plate. Microwave on high for 5-10 minutes or until potato is tender.

  2. While the potato is in the microwave, combine chicken and Thai peanut sauce in a medium mixing bowl.

  3. Halve the cooked sweet potato and top with chicken and Thai peanut sauce mixture. Top with additional peanut sauce, if desired, and cilantro, scallions, and peanuts. Enjoy!
