Thai Chicken Stuffed Sweet Potato
(makes two servings)

1 large sweet potato

1-2 cups shredded rotisserie chicken

2-4 tablespoons Thai peanut sauce

2 tablespoons fresh cilantro, chopped

2 scallions, sliced

2 tablespoons peanuts, chopped

Pierce sweet potato with a fork several times and place on a microwave-safe plate. Microwave on high for 5-10 minutes or until potato is tender.

While the potato is in the microwave, combine chicken and Thai peanut sauce in a medium mixing bowl.

Halve the cooked sweet potato and top with chicken and Thai peanut sauce mixture. Top with additional peanut sauce, if desired, and cilantro, scallions, and peanuts. Enjoy!
