Sweet Potato Burger

Sweet Potato Burger

(makes 4 servings)

  • 1 sweet potato peeled and cubed (about 1 1/2 cups)

  • 1/2 cup sunflower seeds

  • 1/2 cup rolled oats

  • 1 tablespoon fresh parsley, chopped

  • salt and pepper, to taste

  1. Preheat oven to 400 degrees.

  2. Boil sweet potato until soft. Drain excess liquid.

  3. Add boiled sweet potato to a large bowl and mash well.

  4. To the sweet potato, add sunflower seeds, rolled oats, parsley, salt, and pepper.

  5. Allow the mixture to cool and form into 4 patties.

  6. Place patties on a baking sheet lined with parchment paper (spray a bit of oil to prevent sticking) and bake for about 30-35 minutes flipping halfway through.

  7. Top “burgers” with items such as fresh pineapple rings and arugula.

  8. Get creative and enjoy!
