Sweet Potato and Black Bean Chili
(makes 4-6 servings)

2 medium sweet potatoes, diced

1 can black beans, drained

1 can petite diced tomatoes

1 small onion, diced

2 cloves garlic, minced

1/2-1 cup low-sodium vegetable stock

2 tablespoons chili powder

2 teaspoons garlic powder

1 teaspoon salt

chipotle spice, to taste

1 tablespoon olive oil

Heat oil in a large skillet. Add onions to skillet, sprinkle with salt and cook until soft.

Add sweet potatoes and the remaining seasonings. Cook for 3-4 minutes and then place ingredients into a crock pot.

Add vegetable broth, diced tomatoes, and seasonings to a crock pot. Mix to combine all ingredients.

Cook on low for 4-6 hours or until potatoes are fork-tender.

Add black beans and cook for an additional hour or so until the beans are warmed through.

Add additional broth if needed to achieve the desired consistency.
