Sweet Potato and Black Bean Chili

Sweet Potato and Black Bean Chili

(makes 4-6 servings)

  • 2 medium sweet potatoes, diced

  • 1 can black beans, drained

  • 1 can petite diced tomatoes

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1/2-1 cup low-sodium vegetable stock

  • 2 tablespoons chili powder

  • 2 teaspoons garlic powder

  • 1 teaspoon salt

  • chipotle spice, to taste

  • 1 tablespoon olive oil

  1. Heat oil in a large skillet.  Add onions to skillet, sprinkle with salt and cook until soft.

  2. Add sweet potatoes and the remaining seasonings. Cook for 3-4 minutes and then place ingredients into a crock pot.

  3. Add vegetable broth, diced tomatoes, and seasonings to a crock pot. Mix to combine all ingredients.

  4. Cook on low for 4-6 hours or until potatoes are fork-tender.

  5. Add black beans and cook for an additional hour or so until the beans are warmed through.

  6. Add additional broth if needed to achieve the desired consistency.
