Sweet Potato & Black Bean Breakfast
(makes 4 servings)

4 large eggs

15 oz. can black beans, drained and rinsed

2 cups sweet potatoes, diced

1 large avocado, pitted and sliced

4 cups baby spinach, chopped

8 bacon slices, cooked and chopped

1 tablespoon olive oil

salt and pepper to taste

Preheat oven to 400 degrees.

Toss diced sweet potatoes in 1 tablespoon of olive oil. Season with salt and pepper. Place potatoes on a parchment-lined cookie sheet and place in the oven. Bake for 20-25 minutes, turning once. Potatoes should be fork-tender before removing from the oven.

In a large skillet, cook eggs as desired (sunny side up, over easy, scrambled, etc.).

Place back beans in a microwave-safe dish and heat for 90 seconds.

In 4 separate bowls, add one cup of spinach to each bowl. Top each bowl evenly with black beans, sweet potatoes, and bacon. Top off each bowl with an egg and a few slices of avocado.
