[SWEET] ZUCCHINI RECIPES!

What you can expect: a tribute to zucchini!

A versatile yet underrated veggie that offers a plethora of options from savory to sweet. Been noticing a LOT of folks tending to seriously amazing gardens this summer so I’ve got two recipes you can take full advantage of for those lingering zucchini’s!

On the menu are two recipes to sweeten up your life.

  • Zoats (oats + zucchini)

  • Chocolate Zucchini Bread Smoothie

Everything you need is below! Grab what you need from your garden and / or when you hit the grocery store today. Reply back with questions and enjoy!


ZOATS

Ingredients: Here’s What You Need

  • 1 C. Old fashioned oats

  • 2 C. Water

  • 1 C. Zucchini, grated and squeezed of all liquid

  • 6 Egg whites

  • Pinch of sea salt

  • Pinch of cinnamon

  • Additional toppings such as sliced banana, pure maple syrup, nuts, etc.

Recipe: Follow These Steps

  • In a saucepan over medium heat, add oats, water and zucchini. Simmer until most of the liquid is absorbed, about 5 minutes.

  • Remove from heat and add egg whites, stirring constantly.

  • Return to heat and stir until fluffy, about 1 minute

  • Season with salt and cinnamon.

  • Pour into 2 bowls and top with additional ingredients


CHOCOLATE ZUCCHINI BREAD SMOOTHIE

Ingredients: Here’s What You Need

  • 2 Medjool dates, pitted

  • 1 Scoop of protein powder

  • 1 C. Unsweetened Vanilla Almond Milk

  • ½. Riced cauliflower, frozen

  • ½ Medium zucchini, diced

  • ½ Banana, frozen

  • 1 T. Almond butter

  • ½ tsp. Cinnamon

  • 1 T. Unsweetened cocoa powder

  • ½ C. Rolled oats

Recipe: Follow These Steps

  • Add all ingredients to blender and blend until smooth.
