SWEET POTATO PANCAKES

Ingredients: Here’s What You Need

  • 1 medium baked sweet potato baked and cooled

  • 2 large eggs

  • ⅛ tsp. salt

  • Pinch of cinnamon

Recipe: Follow These Step

  • Combine sweet potato, eggs, salt, and cinnamon in a mixing bowl. Mix well, mashing up any chunks of sweet potato. Set better aside.

  • Heat an oiled skillet over medium heat. Add the batter in ¼ cup-sized portions and cook for 3 minutes. Carefully flip the pancake and cook for another 3 minutes

  • Serve warm and add additional toppings such as yogurt, fresh fruit, or natural nut butter.
