It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features Buffalo Chicken Salad. Full recipe is posted below.

Buffalo Chicken Salad

(makes 4-6 servings)

  • 1/4 cup plain Greek yogurt

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons Dijon mustard

  • 2 tablespoons honey

  • 1 tablespoon lemon juice, fresh-squeezed

  • 1 tablespoon apple cider vinegar

  • 1 clove garlic, minced

  • ¼ teaspoon sea salt

  • fresh-ground black pepper

In a small mixing bowl, combine all of the ingredients. Whisk until blended and refrigerate for several hours before using.
