It’s Coach Amie back with this week’s recipe:

SUMMER FARRO SALAD

If you aren’t familiar with farro, this is a whole-grain wheat similar in appearance to barley. It’s packed with fiber and protein and pairs well with lots of dishes like salads, soups and breakfast stuff. This summer salad is a light bite and a welcomed spin on the traditional bowl of leafy greens.

SUMMER FARRO SALAD

Ingredients: Here’s What You Need

  • 2 cups cooked farro

  • ¼ cup red onion, diced

  • 1 pint cherry tomatoes, halved

  • 1 medium cucumber, diced

  • ¼ cup fresh basil, chopped

  • 2 tablespoons olive oil

  • ¼ cup red wine vinegar

  • salt and pepper, to taste

Recipe: Follow These Steps:

  • Place farro in a large serving bowl. Add in tomatoes, cucumber, basil, and onions. Mix gently.

  • In a small bowl, whisk together olive oil and red wine vinegar. Pour over the farro and mix gently to incorporate the dressing.

  • Season with salt and pepper along with any other preferred seasonings
