Smoked Salmon Avocado Bowl

 Smoked Salmon Avocado Bowl (makes one serving)
  • 4 oz smoked salmon
  • 1/2 cup cooked quinoa
  • 1/2 avocado, diced
  • 1 cup cucumber slices
  • 1 tbsp olive oil
  • Lemon juice to taste
Layer ingredients in a bowl, drizzle with oil and a squeeze of lemon juice. Enjoy!
