Sticky Chicken
(makes 2-4 servings)

4 boneless skinless chicken thighs, diced

1/4 cup low-sodium soy sauce or coconut aminos

1/4 cup sweet chili sauce

1/4 cup crunchy natural peanut butter

Preheat oven to 350 degrees.

Place soy sauce, sweet chili sauce, and peanut butter in a small saucepan and mix over low heat until simmering.

Pour sauce over diced chicken and mix to combine.

Place chicken on a lined baking sheet and bake for 25-30 minutes or until chicken is cooked through.
