Spicy Lime Shrimp Skewers
(makes 4 servings)
- 1 pound peeled and deveined shrimp
- 2-3 tablespoons Cajun seasoning
- Juice of one lime
- 1 tablespoon olive oil
- In a medium mixing bowl, combine seasoning, lime juice, and olive oil. Whisk well to combine.
- To the bowl, add the shrimp and toss well to coat. Refrigerate the shrimp for 1-2 hours to marinate.
- When ready to grill, place the shrimp on grilling skewers evenly spacing them apart. Repeat until all shrimp has been used.
- Place shrimp skewers on a prepared grill and cook for approximately 2-3 minutes on each side or, until cooked through.
