Spaghetti Squash Casserole

Spaghetti Squash Casserole

(makes 8 servings)

  • 1 medium-sized spaghetti squash, halved and seeds removed

  • 2 pounds ground turkey

  • 1 tablespoon each garlic powder, onion powder, thyme, oregano, basil

  • 1 bag fresh spinach

  • 4 cups broccoli, chopped

  • 1 large onion, chopped

  • 3 bell peppers, diced

  • 1 32-ounce jar pasta sauce

  • salt and pepper, to taste

  • 1 cup shredded Parmesan cheese (optional)

  1. Preheat oven to 425 degrees.

  2. Place spaghetti squash seeded side down on a cookie sheet lined with foil and bake for 45 minutes.

  3. While the squash is cooking, brown the ground turkey in a large skillet and cook through. Drain and return to skillet.

  4. To the skillet, add 1/2 of the jar of sauce and 1 tablespoon of each seasoning and mix well to combine.

  5. In a large casserole dish, add the remaining sauce and spread to coat the bottom of the dish evenly. Add

  6. spinach, followed by broccoli, onion, peppers and any other veggies you choose to add.

  7. When the spaghetti squash is cool enough to handle, scoop onto the veggies in the casserole dish and

  8. spread evenly. Add salt and pepper, to taste.

  9. Top the casserole dish with the ground turkey mixture and spread evenly. Bake for 10 minutes.

  10. Top with cheese (if desired) and bake for an additional 10 minutes.
