Skillet Taco Turkey + Rice

Skillet Taco Turkey and Rice

(makes 4-6 servings)

  • 1 pound lean ground turkey

  • 1 can black beans, drained and rinsed

  • 2 cups salsa

  • 1-2 teaspoons chili powder

  • 1-2 teaspoons cumin

  • salt and pepper, to taste

  • 2 cups cooked brown rice

  • Your favorite taco toppings!

  1. In a large skillet, brown ground turkey until cooked through. Drain off any excess fat and return to the skillet.

  2. Add beans, salsa, spices , and cooked rice. Mix well to combine and simmer for several minutes until the mixture thickens.

  3. Divide the taco turkey into bowls and top with your favorite taco toppings.
