- 1 pound chicken breast or thighs, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 bell pepper, chopped
- 1 tablespoon olive oil
- Juice + zest of 1 lemon
- 1 teaspoon Italian seasoning, salt, pepper
- Fresh parsley, chopped
- Feta cheese, crumbled (optional)
- Toss all ingredients on a sheet pan and mix well to combine.
- Bake at 425°F for 22–25 min.
- Garnish with fresh parsley and a sprinkle of feta (optional) before serving.
