Sheet Pan Southwest Chicken & Sweet Potatoes

(makes 4 servings)

  • 1 pound chicken breast, cubed
  • 1 medium sweet potato, diced
  • 1 cup mini bell peppers, sliced
  • 1 red onion, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder, 1/2  teaspoon cumin, 1/2  teaspoon smoked paprika, salt
  • Salsa + Greek yogurt (optional)
  1. Mix all ingredients on a sheet pan.
  2. Roast 25-30 min at 425°F, flipping halfway.
  3. Top with a spoonful of salsa or Greek yogurt before serving.
