Pumpkin Oatmeal Muffins


It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu features Pumpkin Oatmeal Muffins – full recipe is posted below:

Pumpkin Oatmeal Muffins

(makes one dozen muffins)

  • 1 1/3 cup milk of choice

  • 2 large eggs, whisked

  • 1/2 cup maple syrup

  • 2/3 cup pumpkin puree

  • 3 cups rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon pumpkin pie spice

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla

  • 1/4 teaspoon salt

**Additional mix-ins: 1/2 cup mini chocolate chips, 1/2 cup chopped nuts, 1/2 cup dried cranberries

  1. Preheat oven to 350 degrees. Lightly spray a 12-cup muffin pan with cooking spray.

  2. In a large bowl, combine all ingredients (except any mix-ins). Combine well and fold in any additional mix-ins.

  3. Fill each muffin cup to the top.

  4. Bake for 30 minutes or, until tops are lightly browned and muffins are set.

  5. Allow cooling before removing from pan.
