Pumpkin Oatmeal Muffins
(makes one dozen muffins)

1 1/3 cup milk of choice

2 large eggs, whisked

1/2 cup maple syrup

2/3 cup pumpkin puree

3 cups rolled oats

1 teaspoon baking powder

1 teaspoon pumpkin pie spice

1 teaspoon cinnamon

1 teaspoon vanilla
-
1/4 teaspoon salt
**Additional mix-ins: 1/2 cup mini chocolate chips, 1/2 cup chopped nuts, 1/2 cup dried cranberries

Preheat oven to 350 degrees. Lightly spray a 12-cup muffin pan with cooking spray.

In a large bowl, combine all ingredients (except any mix-ins). Combine well and fold in any additional mix-ins.

Fill each muffin cup to the top.

Bake for 30 minutes or, until tops are lightly browned and muffins are set.

Allow cooling before removing from pan.
