PUMPKIN OATMEAL MUFFINS

Ingredients: Here’s What You Need

  • 1 ⅓ cup milk of your choice

  • 2 large eggs, whisked

  • ½ cup maple syrup

  • ⅔ cup pumpkin puree

  • 3 cups rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon pumpkin pie spice

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla

  • ¼ teaspoon salt

**additional mix-ins: ½ cup mini chocolate chips, ½ chopped nuts, ½ cup dried cranberries

Recipe: Follow These Steps:

  • Preheat oven to 350 degrees. Lightly spray a 12-cup muffin pan with cooking spray.

  • In a large bowl, combine all ingredients except any mix-ins. Combine well and fold in any mix-ins.

  • Fill each muffin cup to the top. Bake for 30 minutes or, until tops are lightly browned and muffins are set.

  • Allow cooling before removing from pan.
