PUMPKIN OATMEAL MUFFINS
Ingredients: Here’s What You Need
1 ⅓ cup milk of your choice
2 large eggs, whisked
½ cup maple syrup
⅔ cup pumpkin puree
3 cups rolled oats
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon vanilla
¼ teaspoon salt
**additional mix-ins: ½ cup mini chocolate chips, ½ chopped nuts, ½ cup dried cranberries
Recipe: Follow These Steps:
Preheat oven to 350 degrees. Lightly spray a 12-cup muffin pan with cooking spray.
In a large bowl, combine all ingredients except any mix-ins. Combine well and fold in any mix-ins.
Fill each muffin cup to the top. Bake for 30 minutes or, until tops are lightly browned and muffins are set.
Allow cooling before removing from pan.
