Pumpkin Protein Pancakes
(makes 4 servings)
- 8 egg whites
- 1 cup pumpkin puree
- 2 cups whey protein powder
- 1 teaspoon baking powder
- 1 teaspoon pumpkin spice or, cinnamon
- In a large mixing bowl, add all ingredients and mix until combined.
- Spray a large skillet with non-stick cooking spray and heat over medium heat.
- To the skillet, add pancake batter in 8 equal-sized scoops. Depending on the skillet size, you may need to cook in batches.
- Flip the pancakes once the bottom begins to form (about 4-5 minutes). Continue to cook until both sides are cooked through and lightly browned.
- Serve topped with items such as coconut, pumpkin seeds, nut butter, or maple syrup.
