(makes 4-6 servings)
- 8 eggs, whisked
- 1 pint cherry tomatoes, halved
- 1/2 cup mozzarella, shredded
- Preheat oven to 350 degrees.
- Spray an oven-safe skillet with non-stick cooking spray. To the skillet, add the whisked eggs and cherry tomatoes.
- Season with salt, pepper, and any other desired seasonings. On medium heat, allow to cook for several minutes until the bottom begins to set.
- Place the skillet in the oven and cook for an additional 25-30 minutes until cooked through and lightly browned on top.
- Top with mozzarella cheese in the last 5 minutes of cooking.
