Pizza Frittata

(makes 4-6 servings)
  • 8 eggs, whisked
  • 1 pint cherry tomatoes, halved
  • 1/2 cup mozzarella, shredded
  1. Preheat oven to 350 degrees.
  2. Spray an oven-safe skillet with non-stick cooking spray. To the skillet, add the whisked eggs and cherry tomatoes.
  3. Season with salt, pepper, and any other desired seasonings. On medium heat, allow to cook for several minutes until the bottom begins to set.
  4. Place the skillet in the oven and cook for an additional 25-30 minutes until cooked through and lightly browned on top.
  5. Top with mozzarella cheese in the last 5 minutes of cooking.
  6. Enjoy!
