No-Cook Mediterranean Pizza


No-Cook Mediterranean Pizza (makes 1-2 servings)

  • 1 piece whole-wheat naan bread

  • 2-4 tablespoons hummus

  • ¼ cup cucumber, diced

  • ¼ cup cherry tomatoes, halved

  • 2 tablespoons red onion, diced

  • 2 tablespoons crumbled feta

  • ⅛ teaspoon oregano

Vinaigrette

  • 2 tablespoons olive oil

  • 1 teaspoon red wine vinegar

  • ½ teaspoon dijon mustard

  • ¼ teaspoon oregano

  1. Preheat oven to 400 degrees.

  2. In a small mixing bowl, combine all ingredients for the vinaigrette. Whisk together and set aside.

  3. Place naan bread on a baking sheet and bake for 4-5 minutes to warm. Evenly spread hummus over the entire piece of naan. Sprinkle with oregano and top with cucumber, cherry tomatoes, red onion, and feta. Drizzle with vinaigrette and serve.

*Add diced chicken for an extra kick of protein*
