No-Cook Mediterranean Pizza
(makes 1-2 servings)

1 piece whole-wheat naan bread

2-4 tablespoons hummus

¼ cup cucumber, diced

¼ cup cherry tomatoes, halved

2 tablespoons red onion, diced

2 tablespoons crumbled feta

⅛ teaspoon oregano
Vinaigrette

2 tablespoons olive oil

1 teaspoon red wine vinegar

½ teaspoon dijon mustard

¼ teaspoon oregano

Preheat oven to 400 degrees.

In a small mixing bowl, combine all ingredients for the vinaigrette. Whisk together and set aside.

Place naan bread on a baking sheet and bake for 4-5 minutes to warm. Evenly spread hummus over the entire piece of naan. Sprinkle with oregano and top with cucumber, cherry tomatoes, red onion, and feta. Drizzle with vinaigrette and serve.
