MINI FRITTATAS

These are super fun and a great recipe if you want to make in batches and freeze for later use! Feel free to add in your most favorite ingredients to make these mini frittatas your own!

MINI FRITTATAS

Ingredients: Here’s What You Need

  • 1 dozen eggs

  • ½ cup fresh spinach, chopped

  • ½ cup tomatoes, diced

  • ½ cup crumbled feta

  • ¼ cup of milk of choice

  • salt and pepper, to taste

***can use any veggies, protein, or cheese of choice**

Recipe: Follow These Step

  • Preheat oven to 350 degrees and lightly spray a 12-cup standard muffin pan.

  • In a large mixing bowl, whisk together eggs, milk and, desired seasonings. Fill each muffin tin ½ way full.

  • Top each muffin tin with an equal amount of mix-ins (spinach, tomato, and cheese for this version) and gently stir.

  • Bake for 15-20 minutes or, until eggs are set.

  • Allow to cool and gently remove from muffin tin. Can be refrigerated for several days. Simply reheat in the microwave when ready to eat.
