Mason Jar Egg Scramble

(makes 1 serving)

  • 8-ounce mason jar

  • 2 eggs

  • Desired fillings such as veggies, cheese, protein, etc.

  1. Add desired fillings to the mason jar and seal.

  2. When ready to prepare, crack 2 eggs into the mason jar and reseal it.

  3. Shake the jar vigorously to combine eggs and fillings.

  4. Remove the lid and microwave for 90 seconds.

  5. After 90 seconds, stir the eggs. If eggs are not cooked through, microwave in 15-second intervals until eggs are done.
