Maple Bacon Sweet Potato Hash
(makes 2 servings)

4 slices bacon, cooked and chopped

1 sweet potato, peeled and diced

1 tablespoon pure maple syrup

3-4 cups fresh spinach

2-4 eggs

1 tablespoon olive oil

salt and pepper, to taste

Add olive oil to a medium skillet and turn to coat the surface. Add sweet potato to the skillet and cook on medium heat until potatoes are soft and slightly browned.

Once the potatoes are softened, add maple syrup, salt, and pepper. Stir well to combine.

Add spinach to the skillet and allow it to cook down. Top with chopped bacon and remove from heat.

In a separate skillet, cook eggs to your liking.

Place hash in a bowl and top with cooked eggs.
