Maple Bacon Sweet Potato Hash

Maple Bacon Sweet Potato Hash

(makes 2 servings)

  • 4 slices bacon, cooked and chopped

  • 1 sweet potato, peeled and diced

  • 1 tablespoon pure maple syrup

  • 3-4 cups fresh spinach

  • 2-4 eggs

  • 1 tablespoon olive oil

  • salt and pepper, to taste

  • Add olive oil to a medium skillet and turn to coat the surface. Add sweet potato to the skillet and cook on medium heat until potatoes are soft and slightly browned.

  • Once the potatoes are softened, add maple syrup, salt, and pepper. Stir well to combine.

  • Add spinach to the skillet and allow it to cook down. Top with chopped bacon and remove from heat.

  • In a separate skillet, cook eggs to your liking.

  • Place hash in a bowl and top with cooked eggs.
