Lemon Basil Salmon

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features Lemon Basil Salmon.

Ingredients:
  • 4 salmon fillets
  • 2 teaspoons olive oil
  • 1 tablespoon lemon zest, fresh-grated
  • 2 tablespoons fresh basil, thinly sliced
  • 2 medium lemons, thinly sliced
  • salt and pepper, to taste
Instructions:
  1. Preheat oven to 375 degrees. Place salmon fillets in a baking dish lightly sprayed with cooking spray.
  2. Drizzle the salmon fillets with olive oil and top with basil. Season with salt and pepper and place the lemon slices on top of the fillets.
  3. Bake for 15-20 minutes or until the fish begins to flake easily with a fork.
  4. Serve and enjoy!
