Lemon Rosemary Potatoes

Grill Pack Lemon Rosemary Potatoes

  • 1 pound baby red potatoes, quartered

  • 1 Tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • salt, to taste

  • grated lemon zest of 1/2 lemon

  • juice of 1/2 lemon

  • 1 Tablespoon fresh rosemary, minced

  • 1 large piece (18in.x18in.) of aluminum foil

 

  1. In a large bowl, toss all ingredients and mix well to coat the potatoes.

  2. Place potatoes in the center of the aluminum foil. Form a packet by bringing the short ends of the foil together and fold over twice to create a seal. Be sure to allow room for steam.

  3. Place potatoes on a heated grill over medium heat for 30 minutes. Be sure to shake up the packet every 10 minutes to prevent the bottom of the potatoes from burning.

  4. Open carefully and serve.
