Greek Sheet Pan Chicken

(Makes 4 servings)

Marinade

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice, fresh squeezed

  • 4-6 cloves garlic, minced

  • 2 teaspoons paprika

  • 2 teaspoons oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

Chicken and vegetables

  • 4 boneless and skinless chicken breasts

  • 2 bell peppers, thickly sliced

  • 1 red onion, thickly sliced

  • 10 whole garlic cloves

  • 1 pound baby potatoes, halved

  • 1/4 crumbled feta

  • 2 whole lemons, halved

  1. Preheat oven to 400 degrees.

  2. In a small mixing bowl, whisk together marinade ingredients. Set aside.

  3. Lightly spray a large sheet pan with cooking spray. Place chicken, peppers, onion, garlic, and potatoes onto the pan and spread evenly.

  4. Pour marinade over chicken and vegetables. Place halved lemons on the sheet pan as well.

  5. Bake for 30-35minutes or until chicken is cooked through. Squeeze cooked lemons over the chicken and vegetables and sprinkle with crumbled feta.
