(makes 2 servings)
- 1 15-oz. can fire-roasted diced tomatoes
- 1 1/4 cup cottage cheese
- 2/3 cup roasted red pepper
- 2 teaspoons minced garlic
- 3-4 leaves fresh basil
- salt and pepper, to taste
Add all ingredients to a blender and pulse until smooth.
Heat in the microwave or on the stovetop.
