CREAMY SUMMER GAZPACHO

It’s officially summer so what you need is definitely a refreshing bowl of cold soup, better known as:

CREAMY SUMMER GAZPACHO

Seems odd to be having soup in the summer but this one is very much worth a try! Plus, it’s quick and an easy way to score TONS of veggies – your kids won’t even notice! Full list of ingredients and recipe posted below – stay fueled and enjoy!


CREAMY SUMMER GAZPACHO

Ingredients: Here’s What You Need

  • ½ cucumber, peeled and chopped

  • ½ red bell pepper, chopped

  • 2 pounds red tomatoes, chopped

  • 1 ½ cups plain whole fat greek yogurt

  • 2 cloves garlic, minced

  • 2 tablespoons red wine vinegar

  • sea salt, to taste

  • ¼ cup extra virgin olive oil

For garnish:

  • ½ cucumber, chopped

  • ½ red bell pepper, chopped

  • ½ cup cherry tomatoes, halved

  • fresh chives, chopped

  • extra virgin olive oil for drizzling

Recipe: Follow These Step:

  • In a large bowl, place cucumber, bell peppers, and tomatoes. Mix well and then add garlic, vinegar, and salt. Let stand for 20-30 minutes. 

  • Place the above mixture in a blender and add oil and yogurt. Pulse until smooth. Season with salt, pepper, and any additional seasonings as desired.

  • Store blended soup in the refrigerator for 1 hour before serving. Garnish with tomatoes, cucumbers, bell pepper, chives, and a drizzle of olive oil before serving.
