It’s officially summer so what you need is definitely a refreshing bowl of cold soup, better known as:
CREAMY SUMMER GAZPACHO

CREAMY SUMMER GAZPACHO
Ingredients: Here’s What You Need

½ cucumber, peeled and chopped

½ red bell pepper, chopped

2 pounds red tomatoes, chopped

1 ½ cups plain whole fat greek yogurt

2 cloves garlic, minced
-
2 tablespoons red wine vinegar
-
sea salt, to taste

¼ cup extra virgin olive oil
For garnish:

½ cucumber, chopped
-
½ red bell pepper, chopped
-
½ cup cherry tomatoes, halved
-
fresh chives, chopped
-
extra virgin olive oil for drizzling
Recipe: Follow These Step:

In a large bowl, place cucumber, bell peppers, and tomatoes. Mix well and then add garlic, vinegar, and salt. Let stand for 20-30 minutes.

Place the above mixture in a blender and add oil and yogurt. Pulse until smooth. Season with salt, pepper, and any additional seasonings as desired.

Store blended soup in the refrigerator for 1 hour before serving. Garnish with tomatoes, cucumbers, bell pepper, chives, and a drizzle of olive oil before serving.
